Why is environmental monitoring important for Listeria monocyotogenes?

The danger of the Listeria monocytogenes associated disease Listeriosis is real, with a high fatality rate of up to 30% among risk groups. These outbreaks are usually caused by a variety of food, including soft cheese, delicatessen meats and vegetable products.

Listeria monocytogenes is found widely in soil, water and livestock environments. It is not a question of whether it will enter a food factory or not, much rather a question of when. If it does, there is a high risk it can persist in the factory environment as this pathogen is very robust, growing even at 4°C or in high salt concentrations.
